Rotweinkuchen mit Schokolade

Wenn wir einen Kuchen backen, dann meistens diesen Rotweinkuchen. Das Rezept haben wir seit 20 Jahren. Puhh wir werden alt ;-) – aber dieser schokoladige und herrlich duftende Kuchen ist einfach lecker.

Zutaten:

  • 300g Butter oder Margarine
  • 300g Zucker
  • 2 Päckchen Vanillezucker
  • 6 Eier
  • 1,5 TL Zimt
  • 1,5 TL Kakao
  • 200g Raspelschokolade
  • 1/8L Rotwein
  • 300g Mehl
  • 1 Päckchen Backpulver
  • Schokoladenglasur

Den Backofen auf 175°C vorheizen. Die Butter/Margarine, Zucker und Vanillezucker in einer Schüssel mit dem Handrührgerät schaumig schlagen. Die Eier, Zimt, Kakao, die Raspelschokolade und den Rotwein dazugeben und verrühren. Dann das Mehl und das Backpulver dazugeben und verrühren bis ein glatter Teig entsteht. Den Teig in eine eingefettete Kuchenform (Kastenform oder Guglform) geben und für ca. 1h backen. Den Teig nach einer Backzeit von 10 Minuten in der Mitte einschneiden, damit der Teig gleichmäßig aufreissen kann. Die Backzeit kontrollieren, damit der Kuchen nicht zu dunkel wird. Den Kuchen nach dem Backen gut auskühlen lassen und aus der Form nehmen. Die Schokoladenglasur im Wasserbad oder gemäß Anleitung zum Schmelzen bringen und den Kuchen gleichmäßig mit der Schokoladenglasur einpinseln.

Most of the time when we are baking a cake – it is this redwine cake. We have the recipe for about 20 years now. Pheww we are getting old ;-) – but this chocolaty and aromatic cake is simply delicious.

Incredients:

  • 300g butter or margarine
  • 300g sugar
  • 2 sachets vanilla sugar
  • 6 eggs
  • 1,5 tsp cinnamon
  • 1,5 tsp cocoa
  • 200g chocolate flakes
  • 1/8 litre of red wine
  • 300g flour
  • 1 sachet baking powder
  • chocolate glaze

Preheat the oven to 175°C. Put the butter/margarine, sugar and vanilla sugar into a bowl and mix it with the help of a hand blender until it´s foamy. Add eggs, cinnamon, cocoa, chocolate flakes and the red wine and stir thoroughly. Add the flour and the baking powder and stir until a smooth dough. Pour the dough into a greased mould (loaf pan or gugl/bunt) and bake it for about 1 hour. Cut the dough into the middle after a baking time of 10 minutes, so that the dough can crack steadily. After baking, leave the cake to cool briefly an stake it out of the mould. Melt the chocolate glaze in a water bath and grease it over the cake evenly.

apple & kaki crumble

Apfel-Kaki-Crumble

Ein schnell zubereitetes und leckeres Dessert – vor Allem für kalte Tage – ist dieser Apfel-Kaki-Crumble. Wir machen den Crumble auch gerne mit anderem Obst, wie z.B. Zwetschgen oder Beeren.

Zubereitungszeit: 10 Minuten     Backzeit: ca. 30 Minuten

Zutaten für 4 Personen:

  • 2 mittelgroße Äpfel (Braeburn), gewürfelt
  • 1 Kaki, gewürfelt
  • 1 Rolle fertiger Blätterteig
  • 90g Zucker
  • 2 TL Zimt
  • 80g Butter
  • 130g Mehl
  • wahlweise Vanillesauce oder Vanilleeis als Topping

Den Backofen auf 180°C vorheizen. Den Blätterteig so in eine Auflauf- oder Tortenform geben, dass der Teig den Boden bedeckt und ein Rand von ca. 2-3 cm entsteht. Den Teig mit etwas Zimt und Zucker bestreuen. Die gewürfelten Äpfel und die Kaki auf dem Teig verteilen. Zucker, Zimt, Butter und Mehl mit den Händen vermischen, so dass eine krümelige Masse entsteht. Diese nun über die Äpfel und die Kaki verteilen. Das Ganze für 30-35 Minuten im Backofen goldbraun backen. Den Crumble noch warm und mit Vanillesauce oder Vanilleeis servieren.

An apple & kaki crumble is a quickly prepared and delicious dessert – especially for cold days. We love to make this crumble with other kinds of fruits like plums or berries as well.

Preparation time: 10 minutes     Baking time: ca. 30 minutes

Ingredients for 4 people:

  • 2 middle-sized apples (Braeburn), diced
  • 1 kaki, diced
  • 1 roll of puff pastry
  • 90g sugar
  • 2 tsp. cinnamon
  • 80g butter
  • 130g flour
  • vanilla sauce or vanilla ice as topping

Preheat the oven up to 180°C. Give the puff pastry into an ovenproof dish or tarte form. Cover the bottom with the puff pastry and make sure that you have a small brim of approximately 2-3 cm of puff pastry as well. Sprinkle the pastry with a little bit of the sugar and the cinnamon. Place the apples and the kaki on the pastry. Mix the sugar, cinnamon, butter and flour by hand until you have a crumbly mixture and sprinkle the mixture over the fruits. Bake for about 30-35 minutes until golden-brown. Best served warm with vanilla sauce or vanilla ice.
