Bei uns ist es mittlerweile eine richtige Tradition geworden vor Ostern mit Freunden gemeinsam Maultaschen zu machen. Es macht einfach Spaß einen gemeinsamen Mittag mit der Zubereitung von Maultaschen zu verbringen. Es handelt sich zwar um kein schweres aber zeitaufwändiges Kocherlebnis welches umso mehr Spaß macht, wenn man nicht alleine in der Küche steht. Auch weil man die ersten Maultaschen gleich gemeinsam kosten und genießen kann.

Hier ist unsere Maultaschenrezept:

Zutaten für ca. 80 Maultaschen:

Öl
12 Eier
2 zusätzliche gequirlte Eier
2 große, kleingewürfelte Zwiebeln
400 gr. gehackter Spinat aus der Tiefkühle (aufgetaut zum Gebrauch)
4 Stangen Lauch/Porre
frische, gehackte Petersilie
700 gr. Rinderhackfleisch
600 gr. Kalbsbrät
ca. 5 TL Salz
Pfeffer
Muskatnuss
2 helle Brötchen (1-2 Tage alt)
2 Rollen fertiger Nudelteig (ca. 1000 g)
Brühe/Suppe

Die Zwiebel, Lauch und Petersilie mit etwas Öl in der Pfanne anbraten bis alles durch ist. Die Pfanne zum Abkühlen auf die Seite stellen. Die Brötchen in eine Schüssel mit Wasser geben und mit Wasser aufsaugen lassen. Wenn sie komplett gewässert sind, das Wasser ausdrücken und die aufgeweichten Brötchen mit dem Fleisch, den Eiern, dem aufgetauten Spinat und dem abgekühlten Gemüse in eine grosse Schüssel geben und gut durchmischen. Wahlweise auch in einer Küchenmaschine oder mit dem Handmixer. Mit Salz, Pfeffer und Muskat abschmecken.

Nebenher einen großen Topf mit Brühe zum simmern bringen.

Eine Rolle Nudelteig auf der Arbeitsplatte ausrollen und nach ca. 1 Meter abschneiden. Den Teig mit Füllung bestreichen (ca. 0,5 cm dick) so, dass ein kleiner Rand des Teiges nicht mit der Füllung bedeckt ist. Diesen Bereich mit dem gequirlten Ei einstreichen. Nun können die Maultaschen über die kurze Seite, so eingerollt werden, dass eine flache „Rolle“ entsteht. Die Ränder andrücken. Die Rolle mit einem Messer in Stücke schneiden, so dass die einzelnen Maultaschen entstehen.

Die Maultaschen nun nach und nach (Portionsweise) in der simmernden Brühe für ca. 15 Minuten kochen. Am Besten an einer Maultasche testen, ob die Maultaschen schon fertig durchgegart sind oder nicht. Die Maultaschen lassen sich am einfachsten mit Hilfe einer Siebkelle aus der Brühe nehmen. Dies nun wiederholen, bis alle Maultaschen fertig sind.

Die Maultaschen essen wir am liebsten in der Brühe oder angebraten und mit Salat als Beilage.

It has become a valued tradition to make our own „Maultaschen“ with friends before easter. It is a very traditional dish in the southwest of Germany. It´s a lot of fun spending time with friends while cooking the „Maultaschen“. To cook some „Maultaschen“ isn´t a difficult but time-consuming cooking experience, which is much more fun if you spend an afternoon cooking and chatting with some friends. Also because you can try and enjoy the first „Maultaschen“ together.

Here is the recipe we used to make the Maultaschen.

Ingredients for about 80 Maultaschen:

oil
12 eggs
2 scrambled eggs in a small bowl
2 big onions, chopped in fine cubes
400 grams of defrosted minced spinach
4 leeks, chopped in small cubes
fresh parsley, chopped
700 grams of minced meet (beef)
600 grams of sausage meat (Brät in German, it´s finer than minced meat)
about 5 tsp. salt
pepper
nutmeg
2 buns (1-2 days old)
ready made noodle-dough 2 rolls (1000 g)
clear soup/broth

Roast the onions, the leek and the parsley gently into a pan till the vegetables are well done and then let them cool down. Put the buns into a big bowl with water and let them soak the water for a few minutes. Then squeeze the water out. Now you can put the meat, 4 eggs, the buns, the spinach and the vegetables in a big bowl or your kitchen machine. Mix it all well together by machine or by hand. Add pepper, salt and nutmeg till it tastes good. Put a big saucepan with the broth onto the one and heat it while you start to make the first Maultaschen. Open a noodle-dough and roll it out on your kitchen table. Cut the dough after approx. 1 meter. Apply some of the filling onto the dough (approximately 0,5 cm thick) so that you have a small part of the noodle-dough at the side without any filling.

Now put some of the scrambled egg with your fingers on the noodle-dough at the sides. It will hold the dough together after you rolled it. Now you can roll the dough with the filling over the short side together that it looks like a flat roll and slice it into peaces. When the soup is simmering, you can start to put some of the raw Maultaschen into it to cook them for about 15 minutes. You can try one to find out if they are fully cooked. The easiest way to put the Maultaschen out of the soup is with the help of a skimmer.

Repeat, till all Maultaschen are ready. We love to eat the Maultaschen into a fresh soup, or roasted with some salad as side dish.

Rigatoni Mantecati

Wir lieben dieses Gericht – ein absolutes Soulfood für uns. Es ist tolles Essen für die ganze Familie, dass einfach zuzubereiten ist. Auch lässt sich die Sauce super einfrieren oder in grossen Mengen zubereiten.

Zubereitungszeit: 50 Minuten

Zutaten für 4 Personen:

  • 500g Rinderhackfleisch
  • 2 mittelgroße Ochsenschwanzknochen (für den Geschmack)
  • 300g gekochter Schinken, kleingewürfelt
  • 1 Zwiebel, kleingewürfelt
  • 2 Knoblauchzehen, kleingewürfelt
  • 250g Erbsen
  • 1 Liter passierte Tomaten
  • 3 EL Tomatenmark
  • 200ml Sahne
  • 250g Schmand
  • Pfeffer
  • Salz
  • 1 EL Zucker
  • Olivenöl
  • 500g Rigatoni

Die Zwiebel und die Knoblauchzehen in Olivenöl in einem Topf leicht anschwitzen. Schinken, Ochsenschwanzknochen und Hackfleisch dazugeben und alles anbraten. Sobald das Hackfleisch komplett und krümelig angebraten ist, das Tomatenmark hinzugeben und mit der angebratenen Masse mischen. Nun mit den passierten Tomaten ablöschen. Die Sauce bei mittlerer Hitze ca. 45 Minuten köcheln lassen und mit Salz, Zucker und Pfeffer abschmecken. Die Rigatoni in kochendem und gesalzenem Wasser laut Packungsangaben kochen. Solange die Pasta kocht die Erbsen, die Sahne und den Schmand in die Sauce geben und unterrühren. Die fertig gekochten Rigatoni mit der Sauce servieren und geniessen.

We absolutely love this dish –  an absolutely soul food for us. It´s a great and easy-to make dish for the whole family. The sauce is good to freeze and it´s easy to make in larger quantities as well.

Preparation time: 50 Minutes

Ingredients for 4 people:

  • 500g minced meat (beef)
  • 2 middle-sized oxtail bones (for the taste)
  • 300g cooked ham, diced
  • 1 onion, chopped in fine cubes
  • 2 garlic cloves, chopped in fine cubes
  • 250g peas
  • 1 litre passed tomatoes (from the tin)
  • 3 tb tomato paste
  • 200ml cream
  • 250g sour cream
  • pepper
  • salt
  • 1 tb sugar
  • oliveoil
  • 500g rigatoni

Roast the onions and the garlic gently into a saucepan with oliveoil. Put the ham, oxtails and the minced meat and roast all together. Once everything is fried and the minced meat is crumbly, you can add the tomato paste and mix it together. Then put in the passed tomatoes an let it simmer under low heat for about 45 minutes. Add salt, sugar and pepper to taste. Cook the Rigatoni in salted water according to the packaging. Mix the cream, sour cream and the peas into the sauce while the pasta is cooking. Serve the sauce with the ready cooked Rigatoni and enjoy your meal.

Linsen mit Spätzle und Saitenwürstchen

Zubereitungszeit: 1 Stunde

Zutaten für 4 Personen:

  • 350g Tellerlinsen, die nicht vorher eingeweicht werden müssen
  • 1 Zwiebel, gewürfelt,
  • 2 grosse Zwiebel, in Ringe geschnitten
  • 2 Scheiben Bauchspeck, in Streifen geschnitten
  • 2 Karotten, gewürfelt
  • 1 Liter Rinderfond
  • ggf. Mehl zum eindicken oder Saucenbinder
  • Salz
  • Pfeffer
  • 2 Lorbeerblätter
  • 2 Sternanis
  • 4EL Rotweinessig
  • Olivenöl
  • Butter
  • 1EL Zucker
  • Rotwein
  • Spätzle (selbst gemachte Spätzle)
  • 4 Saitenwürstchen/Wiener Würstchen

Gewürfelte Zwiebel, Speck, Linsen und Karotten in einem Topf in Olivenöl kurz anbraten. Dann mit ca. 1/2 Liter Rinderfond ablöschen. Sternanis und Lorbeerblätter dazugeben und die Linsen köcheln lassen. Nach und nach Rinderfond zugeben, so dass die Linsen genug Flüssigkeit haben um weich zu kochen. Die Linsen ca. 45 Minuten kochen bis sie weich sind. In der Zwischenzeit können die Zwiebelringe in Butter und Zucker angeschwitzt werden bis sie weich sind. Mit einem Schuß Rotwein ablöschen. Die Linsen mit Essig, Salz und Pfeffer abschmecken. Wenn die Linsen zu flüssig sein sollten, kann die Sauce mit Saucenbinder oder Mehl eingedickt werden. Nun die Würstchen dazugeben. Die Spätzle kochen oder erwärmen und mit den Linsen, den Zwiebelringen und den Würstchen servieren.

Lentils with Spätzle and Wiener

Preparation time: 1 hour

Incredients for 4 people:

  • 350g lentils „Tellerlinsen“, that doesn’t have to be soaked in water
  • 1 onion, chopped in fine cubes
  • 2 big onions, cut into rings (for the topping)
  • 2 slices of port belly, cut in strips
  • 2 carrots, chopped in small cubes
  • 1 litre of beef stock
  • as appropriate flour or sauce thickener
  • salt
  • pepper
  • 2 bay leaves
  • 2 star aniseed
  • 4 tb red wine vinegar
  • oliveoil
  • butter
  • 1 tb sugar
  • red wine
  • spätzle (homemade Spätzle)
  • 4 wiener

Roast the chopped onion-cubes, pork belly, lentils and carrots into a saucepan with olive oil. Add 1/2 litre of beef stock, star aniseed and bay leaves and stew. Gradually add bet stock, so that the lentils have enough liquid to cook soft. Cook the lentils for approximately 45 minutes until they are soft. In the meantime you can sauté the onion rings into butter and sugar until they are golden. Douse them with a shot of red wine. Season the lentils with red wine vinegar, sale and pepper. If the sauce is too liquid you can thicken it with flour or sauce thickener. Now you can add the wiener to the lentils. Cook or preheat the spätzle and serve them withe the lentils, the onion rings and the wiener.
